Margarita Watermelon Pops
A fun summer treat!
You'll need:
1 watermelon
1 C tequila
3/4 C orange juice, or liquor
1/2 C lime juice
lime zest
lime wedges
kosher or sea salt
large baggie
popsicle sticks
Slice the watermelon into 1" thick slices. Then cut into thirds.
Pour juices and tequila into the large baggie. Add the watermelon slices.
Zip the baggie closed. Moosh it around to be sure all the slices get covered.
Place baggie in the refrigerator for about an hour, occasionally
mooshing the baggie to spread the juices around.
After an hour, remove from refrigerator, discard the juices.
Place each slice on a baking tray.
Cut small holes in the green rind large enough for the popsicle stick to fit in.
Place the sticks in far enough to hold the weight of the watermelon.
Sprinkle each slice with lime zest and salt.
Place the tray in the freezer for 2 hours. Remove from freezer.
Squeeze lime juice on top of each slice, add a lime slice for a pretty presentation, and serve!
