Smazenka (Czech Omelette)
I found a really nice Facebook Group written by a lovely woman who posts traditional Czech recipes. I am part Czech. My great-grandparents both came to the USA in the early 1900's. They found their way to Chicago, got married, and eventually had a daughter, Ann, who would become my maternal grandmother. I grew up knowing my great-grandparents very well. My favorite dish I would eat at their house was cherry dumplings! Here, I share a new recipe I found on the Facebook Group. UPDATE 11.15.22 :
This morning I was looking fir breakfast. I had an English muffin, but I did not want to put butter on it. I remembered I had two leftover mini omelettes that I could make a sandwich with. But what else? Sauce? I decided to add onion and dill pickle! The crunch and savory pickle were just what I needed. I guess this is my twist on the smazenka! Photos at bottom.
Ingredients you'll need to make one omelette:
1 slice rye bread
1 T. breadcrumbs
2-3 dill pickles chips
1-2 onion slices
1 egg
1 T. cold water
1T. yellow mustard
2 T. canola or olive oil
In medium bowl, beat egg with water, breadcrumbs and salt.
Heat oil in pan on medium heat. Be sure to get the pan pretty hot. Pour egg mixture into pan. Let fry for 1 minute, until edges are golden brown. Flip the egg over to fry 1 more minute.
Top egg with pickles, onion and parsley. M-M Good!
What would I do differently in the future? Not much. I really enjoyed the flavors of the pickles, onion and mustard with the egg. Next time I will try toasting the bread to see if that makes any difference. But I truly liked it just the way it was! Thank you, Petra Kupska!
